After honing his skills in the kitchens of Taillevent and Anne-Sophie Pic, David Boyer earned a Michelin star in 2014 and was named *Meilleur Ouvrier de France* in 2023.
As he is passionate about wine, we invited him to a tasting session with LACARAF.

For this occasion, we met him in the Limousin—the Chef’s home region—and selected a 2019 Marsannay Vieilles Vignes Blanc from Domaine Philippe Naddef, a dry white Burgundy wine produced in Marsannay, in the Côte-de-Nuits. It is made from Chardonnay vines over 50 years old. The wine is vinified using indigenous yeasts and aged in oak barrels for 8 to 12 months.
David Boyer was particularly impressed by the balance between the oak and fruit notes in the wine, which was served at 11°C. He noted that the ability to select the serving temperature with half-degree precision offered real added value for him.
The Limousin-based Chef believes that LACARAF would be a perfect fit for his “Dîners Confidentiels”—exclusive, blind gourmet dinners where guests discover the venue and the dishes (and even the food and wine pairings) only upon arrival.

The wine displays a pale yellow color with golden highlights. The nose is complex and aromatic, featuring notes of white fruit, white flowers, spices, and vanilla. On the palate, it is full-bodied and balanced, with lovely acidity. Flavors of white fruit, white flowers, and spices carry through to the finish.
This wine pairs beautifully with fish, shellfish, and cheese dishes. It can also be enjoyed on its own to fully appreciate its qualities.
